Callaloo is a Trinidadian dish. A friend some years ago gave me this version of the traditional recipe. Ingredients:
8 ockras |
1 bundle of dasheen leaves (or spinch leaves) |
small piece pumpkin |
1 small onion |
1 piece hot pepper |
! coconut (to extract the milk) |
celery (optional) |
1 tbsp butter |
2 tbsp cooking oil |
black pepper & salt to taste |
Directions:
1. Clean dasheen leaves (remove stalk from the leaves and clean) 2. Grate the coconut and extract the milk only 3. Wash and chop ockras, pumpkin, onions, stalks and celery and leaves 4. Place the above ingredients in a pot. Add the coconut milk salt and black pepper to taste. Put t to boil. 5. After pot has started to boil, add the oil, butter, sesoning salt and hot peppe 6. Leave to simmer for 20 - 25 mins 7. Remove the pepper and leave to cool. 8. Place in a blender or swizzle |
