Core casserole with veggies, meat and cheese Ingredients:
1 lb lean ground beef (or ground turkey) |
3 medium zucchini, thinly sliced |
1/4 cup sliced green onions with top |
2 teaspoons salt |
1/4 garlic powder |
2 teaspoons chili powder |
1 (7 ounce) can chopped green chilies (or 2 small cans) |
3 cups cooked brown rice |
1 cup nonfat sour cream |
2 cups grated fat-free monterey jack cheese |
1 large fresh tomato, sliced (optional) |
salt and pepper |
Directions:
1. Sauté beef, zucchini, onions and seasonings in lightly greased (sprayed) skillet until meat is no longer pink and veggies are tender-crisp, stirring frequently. Add green chilies, rice, sour cream and 1 cup cheese. 2. Turn into a shallow 2 quart casserole (9x13). Arrange tomato slices on top. Season with salt and pepper. Top with remaining cheese. 3. Bake 350°F for 20-25 minutes. |
