This is my mom's adaption of southern pecan pie. Because we had 2 walnut trees in our yard, she made walnut pie, instead. Now, we all prefer it to pecan pie! Ingredients:
3 eggs; beaten |
1/2 cup light corn syrup |
2/3 cup sugar |
1/2 teasp. vanilla |
1/2 cup butter; melted |
1/2 teasp. salt |
1 cup chopped walnuts |
pastry for a single-crust, 9-inch pie |
Directions:
1. Heat oven to 350 degrees F. Combine eggs, sugar, corn syrup,vanilla, butter & salt & mix well. Stir in walnuts. Pour into unbaked pie shell. Bake at 350 degrees F. for 40 to 45 minutes; or until skewer or knife inserted into center of pie comes out clean. ( If pie is browning too quickly, turn heat down to 300 degrees F. for last few minutes of baking). 2. Serve with whipped cream. |
