This came from my girlfriend Linda again a long time ago. Such a simple bar to make. If I remember right we made these for both our bridal showers. Maybe it was the only recipe we knew how to make.
Ingredients:
1 cup granulated sugar
1 cup all-purpose flour
1 teaspoon salt
1 tablespoon baking powder
2 large eggs
1/2 cup heated milk
1 teaspoon butter
1 teaspoon vanilla
1 cup coconut
6 tablespoons evaporated milk
6 tablespoons butter
10 tablespoons brown sugar
Directions:
1. Base:.
2. Sift together the sugar, flour, salt, baking powder.
3. Add the wet ingredients; eggs, warmed milk, butter, and vanilla.
4. Beat all well; pour into a greased 8 inch cake pan.
5. Bake at 375 degrees Fahrenheit for about 20 minutes.
6. Topping:.
7. Combine the coconut, evaporated milk, butter, and brown sugar until thick.
8. When the base is done, remove from oven.
9. Spread the coconut/brown sugar mixture on top.
10. Place back into the oven and broil until brown and bubbly all over.
11. Remove to rack and let cool completely.
12. Cut into bars.
