California Spinach Casserole |

This makes an interesting side dish or a great dish to take to a pot luck dinner. It can be easily doubled for a large crowd and baked in a 13x9 inch baking pan. Ingredients:
2 (6 ounce) jars marinated artichoke hearts, drained |
1 (16 ounce bag) cut spinach, thawed and squeezed dry |
1/4 cup sweet onion, finely diced |
8 ounces cream cheese, softened |
1/3 cup milk |
3 tablespoons butter, softened |
1/2 cup parmesan cheese, shredded |
Directions:
1. Arrange artichoke hearts in bottom of greased 8 inch baking dish. 2. Layer spinach over artichoke hearts. 3. Sprinkle with onion. 4. Beat together cream cheese, milk and butter. Spread over onion layer. 5. Sprinkle with Parmesan cheese. 6. (At this point, can be covered and chilled up to a day ahead.) 7. Bake, uncovered, at 350 degrees for 30 to 40 minutes. |
