A crisp salad featuring romaine lettuce,tomatoes and Cheddar cheese is tossed with a delightful avocado dressing
Ingredients:
1 avocado,peeled and pitted
1 tbs lemon juice
1/2 c mayonnaise
1/4 tsp hot pepper sauce
1/4 c olive oil
1 clove garlic,peeled and minced
1/2 tsp salt
1 head romaine,rinsed,diced and torn in bite size pieces
3 oz. cheddar cheese,shredded
2 tomatoes diced
2 green onions,chopped
1/4 (2.25 oz) can pitted green olives (i like black olives)
1 c coarsely crushed corn chips (i like lime tostitos)
i add some cilantro to the salad dressing
Directions:
1. In a blender or processor,mix avocado,lemon juoce,mayonnaise,hot pepper sauce,olive oil,garlic,salt and cilantro(or you can sprinkle cilantro into finished dressing).Process till smooth.
2. In large bowl,toss together romaine lettuce,Cheddar cheese,tomatoes,green onions,green or black olives and corn chips ot tostitos. Toss with avocado dressing mixture just before serving.
