California Grande Calamari |

This is a wonderful dish based on a recipe from Isaac Cronin's book, The International Squid Cookbook, which in turn is based on a recipe from ...Ocean Garden Products, a San Diego based company with a strong belief in the future of the Grande Calamari. What more can I say? Ingredients:
4 grande calamari fillets |
1/2 lb monterey jack cheese |
4 ounces mild green chilies |
4 ounces sweet red peppers |
1 egg, beaten |
2 cups breadcrumbs |
oil (for deep frying) |
Directions:
1. Lay strips of Monterey Jack cheese, green chiles and red chiles in the center of each Grande Calamari fillet. 2. Roll steak into a tube shape, securing with toothpicks or string. 3. Dip into egg, then dredge through breading. 4. Heat oil to 350°. 5. Deep fry until golden brown, approximately 4 minutes. 6. Pat off excess oil with paper towels and serve hot. |
