2 slices bacon |
2 ripe avocados, sliced |
3 tablespoons lemon juice |
3 cups cooked chicken, diced |
1/2 cup chopped celery |
1/2 cup creamy bleu cheese salad dressing |
1 tablespoon minced chives |
1 small head romaine lettuce |
2 medium tomatoes, cut in wedges |
8 pitted black olives |
Directions:
1. In a large skillet, cook bacon until crispy. Drain on paper towels, crumble and set aside. 2. Meanwhile toss avocado with 2 tablespoons lemon juice. 3. In a medium bowl, toss chicken with celery, crumbled bacon, blue cheese dressing, chives and remaining lemon juice. 4. Mound salad on lunch plates lined with lettuce. Arrange tomato and avocado in a sunburst around chicken salad. Garnish with olives. |
