California Chicken and Vegetables |

from Ingredients:
4 (1/4 lb) boneless skinless chicken breast half |
3 cups frozen mixed vegetables, thawed, drained (broccoli, red peppers and carrots) |
1/4 cup pesto sauce |
1/4 cup water |
1/2 cup shredded 2% mozzarella cheese |
Directions:
1. HEAT large skillet sprayed with cooking spray on medium-high heat. Add chicken; cover. Cook 5 minute on each side or until lightly browned on both sides. 2. ADD vegetables, pesto and water. Bring to boil. Cook on medium heat 6 to 8 minute or until chicken is done (165°F), stirring occasionally. 3. SPRINKLE with cheese; cover. Remove from heat; let stand 5 minute. |
