I have had this for so long, I forget where the recipe came from. It is fast, easy, & tasty. Great for a work night. Ingredients:
2 chicken breasts, split (1 3/4 to 2 lb) |
2 teaspoons lemon juice |
1 teaspoon dried onion flakes |
basil |
pepper |
2/3 cup shredded cheddar cheese |
1/2 small avocado, thinly sliced |
4 slices thin tomatoes |
Directions:
1. Arrange chicken in square baking dish, sprinkle with lemon juice, onion flakes, basil and pepper. 2. Cook on high in microwave, covered with waxed paper, for 8 1/2 to 9 1/2 minutes or till tender. 3. Top chicken with 1/2 of cheese, avocado, tomato, and remaining cheese. 4. Cook on high 2 1/2 to 3 minutes. 5. Let stand 5 minutes before serving. |
