A different take on coleslaw for the summer. Cook time is chill time. Recipe and photo from a Land o Lakes cookbook 1994. Ingredients:
2 c cauliflower flowerets |
2 c prepared cole slaw mix |
1 c (4 oz) shredded cheddar |
1/4 c chopped onion |
1 medium (1/2 c) carrot, shredded |
1 ( 8 oz) bottle of cucumber dressing'5 slices crisply cooked bacon, crumbled (reserve 1 tbl for garnish) |
Directions:
1. In a medium salad bowl toss together all ingredients except reserved bacon, until well blended 2. Cover; refrigerate at least 4 hours 3. Just before serving, sprinkle with reserved bacon |
