Ingredients:
5 tablespoons butter |
1 1/2 lbs calf liver |
6 slices bacon |
1 onion, minced |
2 tablespoons lemon juice |
2 tablespoons thyme |
1 tablespoon marjoram |
2 tablespoons basil |
1 tablespoon rosemary |
salt |
pepper |
3/4 cup dry white wine |
Directions:
1. Heat 21/2 tablespoons of the butter in a heavy iron skillet, and when it begins to froth, brown the slices of liver quickly on both sides. 2. Remove and place on an oven-proof platter. 3. Grill hte bacon and place on top of the liver. 4. Melt the rest of the butter in the skillet. 5. Add the remaining ingredients. 6. Let come to a boil. 7. Pour over the liver and bacon. 8. Place the platter in a preheated 300ยบ oven for 20 minutes. 9. Serve at once. |
