An easy, creamy dessert from Scotland. Ingredients:
4 ounces cream cheese, softened |
4 fluid ounces double cream |
1 tablespoon orange marmalade (the kind with orange peel in it) |
2 tablespoons brandy (or rum) |
2 teaspoons lemon juice |
1 tablespoon sugar (to taste) |
4 oranges, peeled, pith removed and segmented |
4 teaspoons brandy (or rum) |
Directions:
1. Place first 6 ingredients in a blender and blend until smooth. Add more sugar if needed. 2. Place the orange segments in four long-stemmed glasses and add a teaspoon of brandy (or rum) to each glass. 3. Divide the cream on top of each. 4. Chill until ready to serve. Serve chilled. |
