Sent to me by my uncle. He says that it is authentic Mexican . We made it and was very impressive. Ingredients:
1 beef bone with marrow and, 1 porous beef bone with pieces of chambarete |
(chamberete: spanish style beef crosscut, bone-in beef shanks called chambarete or oso buco in mexico) |
8 cups water |
1/4 onion |
1 sprig cilantro |
1 potato peeled and coarsely cut |
1/2 cup of peas |
Directions:
1. Cook the bones and meat in water with garlic and cilantro. 2. Skim off foam with a spoon. (If making stock) 3. Let boil until the meat is soft. 4. Add potatoes and peas and let cook until they soften. 5. Skim off foam with a spoon. Add salt and pepper. |
