This is an 'adapted' version of my sister's recipe... I like spicy, so I added a 'few' things... Enjoy! Serve with warm flour tortillas.. Ingredients:
2 lbs pork |
( a small pork loin roast works best) |
4 small yellow zuccchini sliced |
1 large bag frozen corn |
1/4 c. jalenpeno peppers chopped fine |
1 small sliced onionz can tomato sauce1/2 tsp salt |
6 c. water |
1 tsp each: garlic powder, pepper, cayenne pepper 2tsp cumin |
Directions:
1. Brown pork till almost done. 2. Add onion and zucchini. 3. Cook till soft. 4. Add rest of ing simmer one hour on low heat.. covered 5. I used a 'dutch oven' |
