People can't quite put a finger on what to make of the calamondin tree, or how to use its fruit-it doesn't look quite like a lime, not quite a true lemon, and it certainly does not taste like an orange. As a matter of fact, one bite of this fruit can pucker your mouth and curl your tongue. Read more . The small seedy fruit, with thin yellowish-green rind and soft, juicy flesh, is verrrry sour! If picked too soon, it is bitter! A good substitute in any lemon or lime recipe. Ingredients:
1 box yellow cake mix |
1 small package of lemon jello, or lime jello |
1/3 cup milk |
1/3 cup of calamondin puree |
4 eggs |
1/2 to 3/4 cup oil |
1 tbsp. lemon extract |
Directions:
1. Combine above cake ingredients, adding eggs one at a time. Beat 4 minutes medium speed. 2. Pour into greased/floured bundt pan (or 9 x12 pan or 2 bread loaf pans). 3. Bake until done in 350 degree heat for 30-45 minutes. 4. Cool, prick top and pour glaze over. 5. - 6. Puree 7. - 8. Wash 14-16 calamondins. DO NOT PEEL the fruit. 9. Quarter the fruit, remove seeds, and center rib. 10. Puree or put through a food processor. 11. Set aside 1/2 cup for the glaze. 12. - 13. Glaze 14. - 15. 1/4 cup butter or margarine 16. 2 cups powdered sugar 17. 2 tsps. lemon extract 18. 1/2 cup puree 19. 1/8 tsp. salt 20. Mix ingredients well and pour over top and sides of cake. |
