Verde means green in Italian and Calabria is the region of Italy 'in the heel of the boot' and is where my mother was born. So this dish is polenta with greens in the style of Reggio Calabria. Polenta was a staple of my youth. Ingredients:
3-4 cups chopped, cleaned cima di rape (broccoli rabe) |
2 cups polenta |
1/2 cup finely chopped pancetta, cooked, reserve drippings |
red pepper flakes |
chicken or veggie broth |
kosher salt |
Directions:
1. Bring 3 quarts of chicken or veggie broth to a boil with a pinch of salt. 2. Add the broccoli rabe and cook for a minute. 3. Begin to add the cornmeal in a slow stream, stirring continuously. Simmer, and stir for about 25 minutes. 4. Add the pancetta and red pepper flakes, and cook another 10 minutes or until tender. 5. Season with the red pepper flakes. 6. Once cooked, pour onto a board and leave for about 5 minutes. Serve each helping with a selection of cheeses, or some tasty grilled sausages |
