Calabrese, as many may know is the Italian name for the sprouting green veggie otherwise known as Broccoli. Hello to all of the Brocco-Chees-o-lite soup groupees out there! In searching this site for Broccoli and Cheese soup you will find there are not 5 or 10 or 50 recipes, but yes there are now including this one 5194 recipes. Read more . So, to all of you who came before and all who will undoubtedly come after; here is my personal favorite! Thanks to all of you who evidently love it as much as I do, I now pay you homage! Rich creamy cheese and broccoli, goes perfectly in a bread bowl, or as a side to a sandwich or all alone. Freezes and reheats well. Ingredients:
1 cup water |
1 chicken bouillon cube |
1 pkg (10 oz) frozen chopped broccoli (i use freshly steamed & chopped) |
1 med. carrot, grated |
2-3 tbl butter |
3 tbl flour |
2 cups milk |
1 lb velveeta cheese (i use about 9/10 of a lb.) |
1 can of cream of chicken soup |
1 tbl minced onion |
1 tbl worcestershire sauce |
pepper to taste |
nutmeg (2 shakes) |
Directions:
1. Heat water and bouillon cube to boiling. 2. Add broccoli and carrot. Cooking 5 minutes or until tender. 3. Remove from heat, do not drain. 4. In separate saucepan, melt butter, slowly stir in flour. 5. Gradually add milk, cook until thickened. 6. Stir in cheese, soup, onion, sauce, pepper, and nutmeg. 7. Add broccoli/carrot mixture, heat and serve. |
