Calabash is a small fishing village on the North Carolina-South Carolina border. We would make a special trip there each year just to eat the popcorn shrimp. Ingredients:
2 eggs |
1 cup whole milk |
1 cup all-purpose flour |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
2 lbs small shrimp, shelled |
Directions:
1. Beat together eggs and milk. 2. Add flour, salt and pepper; stir until smooth. 3. Dip shrimp in batter; remove and place in hot oil. 4. Fry at 375 degrees until crisp. |
