This side dish goes really well with southwestern foods, I've used it with grilled chicken, enchiladas, burritos, Even the kids like it!
Ingredients:
4 zucchini
1 bell pepper red or green
1 small onion
garlic to taste
1 cup of corn, fresh, canned or frozen
2 tbsp olive oil
cilantro to taste
Directions:
1. Dice the zucchini, about 3/4 inch cubes
2. Dice bell pepper and onion
3. slice garlic
4. Place olive oil in skillet
5. Saute bell pepper, garlic and onion until softened slightly
6. Toss in the zucchini, saute until cr isp-tender. Do not overcook!
7. Add corn, and saute until hot.
8. Add cilantro to taste.
9. Additional cilantro may be used for garnish.
