Calabacitas Ingredients:
4 zucchini or 4 yellow squash |
1 large onion, chopped |
3 tablespoons oil |
1/4 teaspoon garlic salt or 2 garlic cloves, minced |
4 ounces green chili peppers, chopped |
16 ounces whole kernel corn |
1 cup cheddar cheese, grated |
Directions:
1. Saute squash and onion in oil until barely tender. 2. Add garlic salt (or fresh garlic), chilies, corn and cheese; mix well. 3. Put in a buttered 1-quart casserole. 4. Bake at 400 degrees Fahrenheit for 20 minutes. |
