I wanted to thin out some of my cookbook collection so I decided to place some of my favorite recipes here. This is from the Amish Friends cookbook. Super easy and moist cake containing pineapple, nuts and bananas. Ingredients:
3 cups flour |
2 cups sugar |
1 teaspoon baking soda |
1 teaspoon salt |
3 eggs |
1 1/2 cups vegetable oil or 1 1/2 cups applesauce |
1 (8 ounce) can crushed pineapple, drained |
1 cup walnuts, chopped |
1 teaspoon vanilla |
2 cups mashed bananas |
Directions:
1. Preheat oven to 350 degrees F. Mix dry ingredients in large bowl. Make well in center and fill with eggs, oil, pineapple, nuts, vanilla and bananas. Stir lightly; do not beat. Pour into greased and floured tube pan or loaf pan. 2. Bake for 75 minutes. |
