Ingredients:
3 1/4 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons cinnamon, divided
1/4 teaspoon salt
2 eggs
1 1/4 cups sugar, divided
1 teaspoon vanilla
2/3 cup light cream
1/4 cup butter, melted and cooled
Directions:
1. In a mixing bowl, combine flour, baking powder, 1 teaspoon cinnamon, and salt.
2. In another bowl, beat together eggs, 2/3 cup sugar, and vanilla until thick and lemon colored.
3. In another bowl, combine cream and butter.
4. Alternately add dry ingredients and cream mixture to egg mixture.
5. Beat each time until just blended.
6. Chill dough for 2 hours.
7. Roll out dough 3/8-inch thick on a powdered sugar or floured surface.
8. Cut with doughnut cutter.
9. Fry in 375° oil turning once; allow about 1 minute per side.
10. Drain on paper towels.
11. Shake warm doughnuts in a small brown paper bag with remaining sugar and cinnamon.
