Ingredients:
1 egg white |
1/2 cup sifted powdered sugar, divided |
1/2 teaspoon almond extract |
2 cups fine cake crumbs (pound, yellow, or white) |
Directions:
1. Beat egg white (at room temperature) in a medium mixing bowl until soft peaks form; gradually add 2 tablespoons powdered sugar, beating until stiff peaks form. Add almond extract, beating until well blended. Fold in remaining powdered sugar and cake crumbs. 2. Drop by heaping teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 300° for 20 minutes or until lightly browned. Remove from cookie sheets, and cool on wire racks. Store cookies in airtight containers. |
