Perfect for parties, these min-treats are easy to make, and taste decadent! Once cooled, balls will keep at room temperature for days. If you refrigerate them, the coating will sweat. Un-dipped balls can kept frozen for weeks. Ingredients:
2 cake mix boxes |
1 cup coconut flakes |
1 can frosting |
30 ounces chocolate chips |
Directions:
1. Mix and bake cake mix as directed (round pans). 2. While warm, crumble cake in bowl. 3. Mix in frosting and coconut flakes. 4. Refrigerate at least 2 hours. 5. After chilled, form 1 round balls (about 100), and place on parchment/waxed paper. 6. Freeze at least 6 hours. 7. Using double boiler, melt chocolate. 8. Working in small batches (2-3 balls) dip in chocolate and place back on parchment paper. Quickly add topping of choice (sprinkles, coconut flakes, etc). 9. Variations: 10. Toppings: Sprinkles, coconut flakes, nuts, chopped sunflower seeds, lined icing, etc. 11. Fillings: Substitute coconut flakes with raspberries or orange zest, add chambord or grand marnier to dipping chocolate or frosting, etc |
