Ingredients:
1 teaspoon vanilla extract
2/3 cup oil (olive if you can afford, not too important of you cant)
3 eggs
1 teaspoon cinnamon
1 teaspoon nutmeg
3 teaspoons baking soda
1 1/4 cups brown sugar
1 cup white flour
1 1/2 cups whole wheat flour
3 1/2 cups grated peeled carrots
100 g roughly chopped walnuts
Directions:
1. Preheat oven to 180 degrees Celsius.
2. Beat eggs, mix in oil, nutmeg, cinnamon, vanilla, brown sugar and baking soda.
3. Add flour and mix - batter should be thick and smooth.
4. Add walnuts and then grated carrots. Carrots will bring the mixture back to a consistency you can pour into a greased 10 inch round pan.
5. Cook 45 minutes or until inserted skewer comes out clean.
6. Ice with cream cheese icing.
