Ingredients:
1 teaspoon vanilla extract |
2/3 cup oil (olive if you can afford, not too important of you cant) |
3 eggs |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
3 teaspoons baking soda |
1 1/4 cups brown sugar |
1 cup white flour |
1 1/2 cups whole wheat flour |
3 1/2 cups grated peeled carrots |
100 g roughly chopped walnuts |
Directions:
1. Preheat oven to 180 degrees Celsius. 2. Beat eggs, mix in oil, nutmeg, cinnamon, vanilla, brown sugar and baking soda. 3. Add flour and mix - batter should be thick and smooth. 4. Add walnuts and then grated carrots. Carrots will bring the mixture back to a consistency you can pour into a greased 10 inch round pan. 5. Cook 45 minutes or until inserted skewer comes out clean. 6. Ice with cream cheese icing. |
