Found this on Recipe Goldmine and it sounds very interesting and easy. Ingredients:
2 tablespoons olive oil |
1/2 cup chopped celery |
1/2 cup chopped green pepper |
1 clove garlic, minced |
1 small onion, chopped fine |
1 lb ground turkey |
1 (16 ounce) can diced tomatoes |
salt and pepper |
1 cup uncooked rice |
1 cup water |
Directions:
1. Saute celery, green pepper, garlic and onion in olive oil. 2. Add ground turkey and brown. 3. Stir in tomatoes, rice, seasonings and water. 4. Bring to a boil, reduce heat, cover and simmer about 20 minutes or until rice is cooked. |
