This is fantastic tuna salad. It is good on a bed of lettuce, on crackers or on toasted bread as a sandwich. Once I start eating this I can't quit, it is very addicting. Enjoy Ingredients:
1-1/2 tablespoons lemon juice |
2 cloves garlic minced |
1/2 teaspoon thyme |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1/8 teaspoon cayenne pepper |
1/2 cup plain yogurt |
3 cups albacore tuna |
1 cup thinly sliced green onion |
1/2 cup diced green bell pepper |
1/2 cup diced celery |
3 cups seeded and diced fresh tomatoes |
Directions:
1. Combine lemon juice and next five ingredients then gently beat in yogurt. 2. Gently fold tuna and next 3 ingredients into dressing then chill. 3. Just before serving fold in tomatoes. |
