The touch of sweetness from the pickle relish balances the spiciness of the blackening seasoning and the acidity of the lemon juice. A tablespoon of sweet relish has 5 grams of carbohydrate, or about 1 gram per serving in this recipe.
Ingredients:
4 (6-ounce) swordfish fillets (1 inch thick)
olive oil-flavored cooking spray
1 1/2 teaspoons blackening seasoning, divided
1/3 cup fat-free mayonnaise
1 tablespoon sweet pickle relish
1 teaspoon fresh lemon juice
lemon wedges (optional)
Directions:
1. Preheat broiler.
2. Coat both sides of fish with cooking spray; sprinkle evenly with 1 1/4 teaspoons blackening seasoning. Place fish on broiler pan coated with cooking spray. Broil 6 minutes on each side or until fish flakes easily when tested with a fork.
3. Combine mayonnaise, 1/4 teaspoon seasoning, relish, and lemon juice, stirring well. Serve fish immediately with mayonnaise mixture and, if desired, lemon wedges.
4. carbo rating: 4
