Tastes so much like Shrimp Creole! Love it! Ingredients:
2 slices bacon |
2 tablespoons flour |
1 medium onion (chopped) |
1/2 cup chopped celery |
1/2 cup chopped green bell pepper |
1 large garlic clove (minced) |
1/2 teaspoon dried crushed thyme leaves |
1/2 cup v- 8 vegetable juice |
1 tablespoon hot sauce |
1 lb large shrimp (shelled and deveined) |
4 cups cooked rice |
Directions:
1. In large skillet cook bacon until crisp. Set aside. In 2T. drippings cook flour 1 minute, stirring constantly. Add veggies and thyme. Cook until veggies are tender, stirring occasionally. Stir in V8 juice, hot sauce and shrimp. Cook until shrimp are pink and opaque. Serve over hot cooked rice. Top with crumbled bacon, if desired. |
