After several attempts at making a Cajun themed meal, I came up with this spicy marinade for chicken breasts. The flavors blend perfectly with chicken with just enough heat that isn't over-powering. Ingredients:
1/2 tablespoon cayenne |
1 tablespoon paprika |
1 tablespoon garlic powder |
1/2 tablespoon oregano |
1/2 tablespoon ground thyme |
1/2 tablespoon onion powder |
1/2 tablespoon salt |
1/4 teaspoon white pepper |
1/4 teaspoon black pepper |
1 teaspoon crushed red pepper flakes |
1/3 cup soy sauce |
1/3 cup apple cider vinegar |
1/3 cup vegetable oil |
2 boneless chicken breasts |
Directions:
1. Combine all the ingredients in a bowl (except the chicken) and whisk until well blended. Reserve 1/4 cup of the marinade in a cup for basting. 2. Add the chicken to the marinade. Cover and refrigerate for at least 2 1/2 hours (shaking and flipping every 30 minutes). 3. Preheat the grill for medium/high heat. 4. Grill on a lightly oiled rack for 25 to 30 minutes, flipping and basting every 10 minutes. |
