Inspired by the piquant flavors of the Louisiana bayou, this no-fuss entrée makes entertaining easy. Ingredients:
4 ounces uncooked vermicelli |
2 tablespoons light butter |
3/4 cup finely chopped vidalia or other sweet onion |
1/4 pound large shrimp, peeled and deveined |
1 3/4 teaspoons cajun seasoning |
1/4 teaspoon salt |
1/4 cup water |
Directions:
1. Cook pasta according to package directions, omitting salt and fat; drain. 2. Heat butter in a large nonstick skillet over medium-high heat, stirring until butter melts. Add onion, and cook, stirring constantly, 3 minutes. Add shrimp, Cajun seasoning, and salt; cook 3 minutes or until shrimp are done, stirring constantly. 3. Remove from heat. Serve shrimp mixture over pasta. Add water to pan drippings, and cook over high heat 30 seconds; pour evenly over each serving. |
