Except for peeling the shrimp, it was relatively fast and easy to make. My version serves about 4-5 (lotsa shrimp for one person, I make this planning to get at least 3 meals out of it. Ingredients:
2 lbs jumbo shrimp (emeril called them tiger prawns ) |
1 cup extra virgin olive oil |
1 teaspoon white pepper |
1 teaspoon garlic powder |
1 teaspoon onion powder |
1 teaspoon cayenne pepper |
1 teaspoon paprika |
1 teaspoon ground black pepper |
Directions:
1. Peel and wash the shrimp. 2. In a large bowl, coat the shrimp with the olive oil. (Note- you might need less than 1 cup. I think I used less. Just use enough to get the shrimp fully coated and have a little extra for sauteeing.). 3. Add the spices, and mix well. 4. Let sit for 10 minutes for the shrimp to absorb the Cajun seasoning and oil and fully marinate. 5. Pour the entire contents of the bowl into a frying pan, and cook on medium-high heat until the shrimp are pink and opaque. 6. Serve immediately, great with rice; and also with some pasta and greens with cannellini! |
