Cajun Salmon Stew

an old recipe from my Grandma. We eat this on rice with a side of french fries and corn.
Ingredients:
1 can of pink salmon, skin and bones removed
1 chopped onion
1/2 cup of dry roux
4 cups of water
salt, pepper, & creole seasoning to taste
Directions:
1. Spray heavy pot with non-stick spray
2. Saute onions until clear
3. Add 1/2 cup of dry roux with 1/2 cup of water to make creamy roux
4. Let this cook on low about 5 mins
5. Add the rest of the water and the can of salmon
6. Add seasonings
7. Bring to a boil
8. Cover and let simmer about 20 mins.
9. serve over rice.... I hope you like it!
