spicy potato skins! Great for just about any get together! Ingredients:
4 baked russet potatoes |
1/2 cup finely shredded cheddar cheese |
1/2 cup finely shredded swiss cheese |
1/8 teaspoon cayenne pepper |
1/8 yeaspoon paprika |
4 slices crisp-fried bacon, crumbled |
1/2 cup sliced green onions |
1 cup sour cream |
Directions:
1. preheat broiler 2. cut potatoes lengthwise into quarters 3. scoop out 3/4 of the pulp, reserve for another purpose 4. place potatoes on broiler pan or baking sheet 5. broil 4 inches from heat source for 8 minutes or until golden 6. sprinkle potatoes with cheddar, swiss, cayenne pepper, paprika and bacon 7. sprinkle with green onions 8. broil for 3 minutes or until cheese bubbles 9. serve hot with sour cream for dipping |
