This is a different twist on potato salad. It's very tasty and I always get rave review when I serve it. Goes well with Fried Chicken and Corn. Yummy. We love it and hope you do to. Ingredients:
5 pounds potatoes peeled and diced |
1 large onion diced |
10 eggs boiled |
1 cup mayonnaise |
2 teaspoons cajun seasoning |
1 teaspoon salt |
2 teaspoons freshly ground black pepper |
Directions:
1. Boil potatoes in water. 2. Drain. 3. Add chopped onion to potatoes. 4. Set aside. 5. Separate boiled eggs. 6. Put the yolks in medium bowl and mash with a fork until mixed. 7. Add mayonnaise and seasoning to yolks and mix well. 8. Chop egg whites. 9. Add to the potato onion mixture and mix well. 10. Season with salt and pepper. |
