These sound so good and i love potato cakes Ingredients:
5 pounds red potatoes, peeled and chopped |
salt, black pepper, and cayenne pepper, to taste |
1 onion, grated |
2 eggs |
flour |
oil for frying |
Directions:
1. Boil potatoes in salted water to cover about 20 minutes. Drain potatoes and mash well, adding salt, black pepper, cayenne pepper, onion, and eggs; mix well. 2. Shape into cakes about 2-inches in diameter and 1/2-inch thick; roll in flour. 3. Place in refrigerator overnight. 4. Re-dust with flour; fry in 1/2-inch oil in a nonstick skillet turning once until brown on each side. 5. Makes 24 cakes |
