What a delightful to make a roast. The fantastic combination of these ingredients that you probably have on hand is incredible. This is a regular in my home and one I make all winter long. Great comfort food. Ingredients:
2-1/2 pound boneless beef chuck pot roast |
3 teaspoons cajun seasoning |
1 tablespoon cooking oil |
1 can cajun style stewed tomatoes |
1 cup chopped white onion |
1 cup chopped celery |
1/4 cup quick-cooking tapioca |
1 teaspoon minced garlic |
hot cooked rice |
Directions:
1. Trim fat from roast. 2. Rub Cajun seasoning all over meat. 3. Brown in large skillet using the cooking oil. 4. In crock pot combine undrained tomatoes, onion, celery, tapioca and garlic. 5. Place roast on top. 6. Cover and cook on low setting for 10 hours. 7. Slice meat and serve with sauce over rice. |
