This is an easy way to make your crunchy chicken....Has lots of flavor and so easy to do...2002 Cooking Light recipe. Ingredients:
1/3 cup low fat buttermilk |
1 tablespoon cajun seasoning (or you can use curry seasoning) |
1/2 teaspoon salt |
1 cup panko (japanese bread crumbs) |
2 chicken breasts halved, skinned |
2 chicken drum sticks, skinned |
2 chicken thighs, skinned |
cooking spray |
Directions:
1. Prehead oven to 400 degrees. 2. Combine first 3 ingredients in a shallow dish. 3. Place panko in a shallow dish. 4. Dip chicken, one piece at a time, into buttermilk mixture; dredge in panko. 5. Place chicken on a baking sheet lined with parchment paper. 6. Lightly coat chicken with cooking spray. 7. Bake at 400 degrees for 40 minutes or until done; turning after 20 minutes. 8. Yield: 4 servings |
