Cajun Ham and Potato Bake |

A good recipe for using leftover ham. Ingredients:
1 tablespoon red wine vinegar |
1 tablespoon dijon mustard |
2 medium potatoes, peeled and sliced |
3/4 cup lean ham, diced |
2 teaspoons chili powder |
1/4 teaspoon cumin |
1 onion, sliced |
Directions:
1. Preheat oven to 350 degrees F. 2. Spray a 9-inch square baking dish with nonstick spray. 3. Set aside. 4. In a medium bowl, combine vinegar, mustard, chili powder, and cumin. 5. Add potatoes, onion and ham; toss to coat. 6. Transfer to the pan. 7. Bake, covered, for 35 minutes. 8. Uncover and bake 10 minutes longer, or until potatoes are tender. |
