From a cookbook published in New Iberia, Louisiana. Ingredients:
2 eggs |
3/4 cup dark brown sugar, packed |
3/4 cup light molasses |
3/4 cup butter, melted |
2 1/2 cups all-purpose flour |
2 teaspoons ground ginger |
1 1/2 teaspoons ground cinnamon |
1/2 teaspoon ground cloves |
1/2 teaspoon ground nutmeg |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 cup boiling water |
1 cup pecans, chopped |
Directions:
1. Beat eggs, brown sugar, molasses and melted butter together. 2. Mix together dry ingredients and add with the boiling water to first mixture. 3. Beat well, then pour into a well greased 13x9x2 inch baking pan. 4. Bake in preheated oven at 350F for 35 minutes. |
