A lovely Cooking Light recipe. Ingredients:
1 tablespoon dried oregano |
1 1/2 tablespoons garlic, minced |
2 teaspoons black pepper |
1 teaspoon seasoning salt |
1 teaspoon chili powder |
1 teaspoon ground cumin |
1/2 teaspoon crushed red pepper flakes |
1 (2 lb) boneless pork loin roast, trimmed |
Directions:
1. Preheat oven to 350ºF. 2. In a small bowl mix the oregano, garlic, black pepper, seasoned salt, chili powder, cumin and red pepper together; rub evenly over roast. 3. Place on a broiler pan coated with cooking spray. 4. Bake for 1 1/2 hours or until a thermometer register 155-160ºF. 5. Let stand 10 minute before slicing. |
