Cajun Fried Okra With Bacon |

Ole Bills' Easy quick down home cooking! Ingredients:
4-6 pieces of thick bacon, chopped small and fried in a large skillet |
1 lb okra cut 1/2 inch thick (not breaded) |
1 onion chopped |
1 bell pepper chopped |
1 or 2 cloves of garlic diced |
1/2 cup chopped or dried parsley |
1/2 tsp cumin |
a few dashes of soy sauce |
cajun seasoning to taste |
Directions:
1. Fry bacon until crisp and drain. 2. On medium high heat, cook vegetables in bacon grease until tender ~15 minutes. 3. Add crumbled bacon to the veggies. and toss. 4. Variation: When vegetables are tender, add one can of stewed tomates and reduce. Add Bacon when done. |
