The thick and chunky tomato sauce gets its fire from the hot sauce and a little pungency from the fresh cilantro. Ingredients:
cooking spray |
2 teaspoons olive oil |
4 (6-ounce) skinless, boneless chicken breast halves |
1 (14 1/2-ounce) can stewed tomatoes, undrained and chopped |
1 green bell pepper, coarsely chopped |
1/3 cup chopped fresh cilantro, divided |
2 teaspoons hot sauce |
1/2 teaspoon dried thyme |
hot sauce (optional) |
thyme sprigs (optional) |
Directions:
1. Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken to pan, and cook 4 to 5 minutes on each side or until chicken is done. 2.
