Ready, Set, Cook! Special Edition Contest Entry: cajun spiced soup with an egg on top Ingredients:
32 ounces chicken broth |
1 medium carrot, diced fine |
1 red bell pepper, seeded diced |
1 green bell pepper, seeded diced |
8 ounces frozen corn |
8 ounces andouille sausages, choppd fine |
1 (20 ounce) package simply potatoes diced potatoes with onion |
1 teaspoon cumin |
2 teaspoons chili powder |
1 tablespoon chipotle chile in adobo |
1 teaspoon fresh ground black pepper |
1 teaspoon fine sea salt |
6 large eggs |
Directions:
1. combine all ingredients except eggs in stock pot simmer 20 minutes. 2. ladle into bowls and crack an egg into each bowl.and let set for 2 minutes. |
