a nice side dish for any grilled protein Ingredients:
2 tablespoons butter |
3 tablespoons cajun seasoning |
1 (14 ounce) can diced tomatoes with juice |
3/4 cup celery, diced |
3/4 cup green onion, diced small |
3/4 yellow onion, diced small |
3/4 cup red bell pepper, diced small |
2 cups white rice, raw |
3 1/2 cups water |
Directions:
1. saute vegetables in butter over medium heat until soft. 2. add all other ingredients and stir well bring to a boil reduce the heat and cover. 3. turn heat to low for 25 minutes. |
