CAJUN CORN SOUP This is a recipe I obtained from an International Dinner party at my friend Jean’s house. This was one of the recipes a guest brought and it was a big hit. Ingredients:
1 cup chopped white onion |
6 ounce can tomato paste |
1 cup chopped green pepper |
2 packages frozen whole kernel corn |
6 green onions sliced |
1/2 cup vegetable oil |
3 cups cubed cooked ham |
1/2 cup all purpose flour |
1-1/2 pounds fully cooked smoked sausage sliced |
3 cups water |
14 ounce can cajun style stewed tomatoes |
1/4 teaspoon cayenne pepper |
1 teaspoon salt |
2 cups chopped peeled fresh tomatoes |
2 teaspoons hot pepper sauce |
Directions:
1. In a large kettle sauté onion, green pepper and green onions in oil for 5 minutes. 2. Add flour and cook until bubbly. 3. Add water, stewed tomatoes, chopped tomatoes and tomato paste then mix well. 4. Stir in corn, ham, sausage, cayenne pepper, salt and pepper sauce. 5. Bring to a boil stirring frequently. 6. Reduce heat then simmer uncovered for 1 hour stirring occasionally. |
