This is another recipe from my rotel Cookbook.... The recipe was by a gentleman named Don Babin. The recipe is excellent if you love spicy veggies... Ingredients:
2 packages frozen corn or 3 to 6 ears of fresh corn cut off cob |
1 onion, chopped |
1 bell pepper, chopped |
2 tablespoons cooking oil |
2 teaspoons creole seasoning |
1 can rotel tomatoes and green chilies |
1 tablespoon sugar |
1/4 cup milk |
Directions:
1. In a large saucepan, heat oil and saute onion and bell pepper until wilted. 2. Add rotel tomatoes and green chilies and the creole seasoning. 3. Continue cooking over medium heat for 5 minutes. 4. Add corn, milk, and sugar and simmer for 45 minutes to 1 hour. 5. Serve hot. |
