CAJUN COLESLAW This is a recipe I obtained from an International Dinner party at my friend Jean’s house. This was one of the recipes a guest brought and it was a big hit. Ingredients:
5 tablespoons mayonnaise |
1 teaspoon hot sauce |
2 tablespoons yellow mustard |
2 tablespoons ketchup |
2 tablespoon olive oil |
1 tablespoon wine vinegar |
1 teaspoon garlic alt |
1 tablespoon worcestershire sauce |
juice of one lemon |
3 teaspoons salt |
4 bell pepper sliced |
2 medium onions shredded |
1 large head cabbage shredded |
Directions:
1. Put mayonnaise and mustard in a bowl large enough to hold complete mixture. 2. Beat mayonnaise and mustard until combined. 3. Add olive oil slowly beating constantly. 4. Beat until mixture has returned to the thickness of original mayonnaise. 5. Add hot sauce continuing to beat. 6. Add ketchup and keep beating. 7. Add salt and garlic salt beating constantly. 8. Add wine vinegar and beat thoroughly then add lemon juice, salt and pepper. 9. Place shredded cabbage, peppers and onions in a large salad bowl. 10. Pour sauce over and toss well. 11. Refrigerate at least one hour before serving. |
