Great way to use fresh tomatoes. You can use a can of diced tomatoes if that's all you have - just increase the amount of tomato paste. Don't be shy with the cajun seasoning if you want it spicy. Ingredients:
2 teaspoons garlic, crushed |
8 oz. boneless chicken breast, cut into thin strips |
1 lb. fresh tomatoes, chopped ('3 medium tomatoes) |
1/2 cup chopped onion |
1/2 cup sliced celery (with leaves) |
1/2 cup chopped green pepper |
1/4 cup tomato paste |
1 tablespoon cajun seasoning |
1 teaspoon bay leaf |
Directions:
1. Cook 8 oz. of your choice of pasta al dente 2. In a large skillet stir fry garlic & chicken about 3 minutes 3. Reduce heat to low & add all ingredients except the pasta - cover and simmer about 10 minutes until veggies are tender 4. Toss gently with pasta and remove bay leaf |
